- 1/4 cup boiling water
For the Peanut Butter Filling:
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter (softened)
- 1 cup powdered sugar
- 1/2 tsp vanilla extract
- 1/2–1 cup heavy cream
For the Topping:
- 1 cup semi-sweet chocolate chips
- 1/2–1 cup heavy cream (for ganache)
- 1/2 cup chopped peanut butter cups
Instructions
1. Prepare the Cake
- Preheat oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In another bowl, beat eggs and sugar until thick and pale.
- Add vanilla extract and mix.
- Gently fold dry ingredients into the egg mixture.
- Stir in hot water until smooth.
2. Bake
- Spread batter evenly into the pan.
- Bake for 12–15 minutes until the cake springs back when touched.
3. Roll the Cake
- Turn the warm cake onto a clean towel dusted with powdered sugar.
- Remove parchment paper and roll the cake with the towel from the short end.
- Let cool completely.
4. Make the Filling
- Beat peanut butter and butter until creamy.
- Add powdered sugar and vanilla extract.
- Mix in heavy cream until light and spreadable.
5. Assemble
- Carefully unroll the cooled cake.
- Spread filling evenly over the surface.
- Sprinkle chopped peanut butter cups.
- Roll the cake back up tightly and place seam-side down.
6. Add the Topping
- Heat heavy cream and pour over chocolate chips; stir until smooth.
- Drizzle ganache over the cake.
- Top with additional peanut butter cups.
- Chill for at least 1 hour before slicing.
