Ingredients

  • 1.21.5 kg (2.5–3 lb) pork loin
  • 1 can (330 ml) Coca-Cola
  • ½ cup ketchup
  • ¼ cup brown sugar
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard (optional)
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  • Preheat oven to 180°C (350°F).
  • Place pork loin in a roasting dish.
  • In a bowl, mix Coca-Cola, ketchup, brown sugar, Worcestershire sauce, mustard, garlic, salt, and pepper.
  • Pour mixture over the pork, coating well.
  • Cover with foil and bake for 1 hour.
  • Remove foil, baste with sauce, and bake uncovered for 30 minutes until caramelized.
  • Let rest for 10 minutes before slicing. Serve with sauce.
