- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup cream cheese, softened
- 1/2 cup mozzarella cheese, shredded
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the chopped spinach, cream cheese, mozzarella cheese, minced garlic, salt, and pepper. Mix well until it forms a creamy filling.
- Take each chicken breast and make a pocket by slicing it horizontally, but do not cut all the way through.
- Stuff each chicken breast with the spinach mixture. Use toothpicks to seal the openings if needed.
- Heat some olive oil in a pan over medium heat. Sear each stuffed chicken breast for about 3-4 minutes on each side until golden brown.
- Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes until the chicken is cooked through.
- Let them rest for a few minutes before serving.
Notes
Finely chop the spinach for even filling and pound chicken breasts to an even thickness for even cooking.
