Description

Healthy and flavorful Spinach Stuffed Chicken Breasts filled with a creamy spinach and cheese mixture, perfect for a balanced dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the chopped spinach, cream cheese, mozzarella cheese, minced garlic, salt, and pepper. Mix well until it forms a creamy filling.
  3. Take each chicken breast and make a pocket by slicing it horizontally, but do not cut all the way through.
  4. Stuff each chicken breast with the spinach mixture. Use toothpicks to seal the openings if needed.
  5. Heat some olive oil in a pan over medium heat. Sear each stuffed chicken breast for about 3-4 minutes on each side until golden brown.
  6. Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes until the chicken is cooked through.
  7. Let them rest for a few minutes before serving.

Notes

Finely chop the spinach for even filling and pound chicken breasts to an even thickness for even cooking.
