Ingredients

  • 1 box yellow cake mix
  • 3 large eggs
  • 1 cup crushed pineapple (drained, but reserve juice)
  • 1/2 cup vegetable oil
  • 1 cup shredded coconut
  • 1 cup chopped walnuts (optional)
  • 1 cup powdered sugar
  • 1/4 cup pineapple juice (reserved from crushed pineapple)
  • 1/2 cup cool whip or whipped cream (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large mixing bowl, combine the cake mix, eggs, vegetable oil, and crushed pineapple with juice. Mix until smooth.
  3. Fold in the shredded coconut and chopped walnuts if using.
  4. Pour the batter into the prepared baking pan and spread evenly.
  5. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. While the cake is baking, mix the powdered sugar and reserved pineapple juice in a small bowl until smooth for the glaze.
  7. Once the cake is done, allow it to cool for about 10 minutes before drizzling the glaze on top.
  8. Top with cool whip or whipped cream.
  9. Chill in the refrigerator for a couple of hours before serving. Enjoy!

Notes

Make sure to drain the crushed pineapple well to avoid a soggy cake. For added flavor, consider adding a teaspoon of vanilla extract to the batter.
