- 1 box yellow cake mix
- 3 large eggs
- 1 cup crushed pineapple (drained, but reserve juice)
- 1/2 cup vegetable oil
- 1 cup shredded coconut
- 1 cup chopped walnuts (optional)
- 1 cup powdered sugar
- 1/4 cup pineapple juice (reserved from crushed pineapple)
- 1/2 cup cool whip or whipped cream (for topping)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large mixing bowl, combine the cake mix, eggs, vegetable oil, and crushed pineapple with juice. Mix until smooth.
- Fold in the shredded coconut and chopped walnuts if using.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- While the cake is baking, mix the powdered sugar and reserved pineapple juice in a small bowl until smooth for the glaze.
- Once the cake is done, allow it to cool for about 10 minutes before drizzling the glaze on top.
- Top with cool whip or whipped cream.
- Chill in the refrigerator for a couple of hours before serving. Enjoy!
Notes
Make sure to drain the crushed pineapple well to avoid a soggy cake. For added flavor, consider adding a teaspoon of vanilla extract to the batter.
