- 4 cups chicken broth

- Salt and pepper to taste
Instructions
- In a large pot, melt butter over medium heat.
- Add the flour and whisk for 2-3 minutes until it turns golden.
- Gradually add chicken broth, whisking constantly to keep it smooth.
- Stir in the diced potatoes and bring the mixture to a boil.
- Reduce the heat and let it simmer until the potatoes are tender.
- Add heavy cream, cheddar cheese, crumbled bacon, and chopped green onions.
- Season the soup with salt and pepper to taste.
