Description

A creamy and comforting potato soup inspired by a classic baked potato, perfect for chilly days.

Ingredients

Scale
  • 4 large russet potatoes, peeled and diced
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • 1/2 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add the flour and whisk for 2-3 minutes until it turns golden.
  3. Gradually add chicken broth, whisking constantly to keep it smooth.
  4. Stir in the diced potatoes and bring the mixture to a boil.
  5. Reduce the heat and let it simmer until the potatoes are tender.
  6. Add heavy cream, cheddar cheese, crumbled bacon, and chopped green onions.
  7. Season the soup with salt and pepper to taste.
  8. Serve hot and add any extra toppings you like!

Notes

Ensure potatoes are cut into even pieces for consistent cooking. You can blend part of the soup for a thicker texture if desired.
