- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 (28-ounce) can diced tomatoes
- 4 cups beef broth
- 8 ounces lasagna noodles, broken into pieces
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- In a large pot, brown the ground beef with the diced onion and garlic until fully cooked.
- Drain the excess fat.
- Add the diced tomatoes, beef broth, lasagna noodles, Italian seasoning, salt, and pepper. Bring to a boil, then simmer until the noodles are tender, about 10-12 minutes.
- Stir in the ricotta and half of the mozzarella cheese until melted.
- Serve hot, garnished with the remaining mozzarella and fresh basil.
Notes
You can use ground turkey or chicken for a healthier option. Add vegetables like bell peppers or spinach for extra nutrition. For a vegetarian version, substitute the ground beef with lentils or mushrooms, and use vegetable broth instead of beef broth.
