A comforting and easy-to-make lasagna soup that combines all the flavors of traditional lasagna in a single pot, perfect for busy weeknights.


Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 (28-ounce) can diced tomatoes
  • 4 cups beef broth
  • 8 ounces lasagna noodles, broken into pieces
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  1. In a large pot, brown the ground beef with the diced onion and garlic until fully cooked.
  2. Drain the excess fat.
  3. Add the diced tomatoes, beef broth, lasagna noodles, Italian seasoning, salt, and pepper. Bring to a boil, then simmer until the noodles are tender, about 10-12 minutes.
  4. Stir in the ricotta and half of the mozzarella cheese until melted.
  5. Serve hot, garnished with the remaining mozzarella and fresh basil.

Notes

You can use ground turkey or chicken for a healthier option. Add vegetables like bell peppers or spinach for extra nutrition. For a vegetarian version, substitute the ground beef with lentils or mushrooms, and use vegetable broth instead of beef broth.
