- 1 cup lentils
- 2 potatoes, diced
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion, garlic, carrots, and celery; sauté until softened.
- Stir in the cumin and cook for another minute.
- Add the lentils, diced potatoes, and vegetable broth.
- Bring to a boil, then reduce the heat and let simmer for about 25-30 minutes, or until the lentils and potatoes are tender.
- Season with salt and pepper to taste.
- Serve hot and enjoy your comforting soup!
