  • 56 medium potatoes, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional)
  • ½ teaspoon dried thyme (optional)
  • 2 tablespoons butter or olive oil
  • 2 tablespoons all-purpose flour

Instructions

  1. Prep Ingredients: Wash, peel, and dice potatoes. Chop onion and mince garlic.
  2. Brown Meat: In a skillet, melt butter or heat oil. Brown ground beef over medium heat until fully cooked; drain excess fat.
  3. Assemble in Crockpot: Add potatoes, onions, garlic, and browned hamburger to the crockpot. Pour in beef broth and season with salt, pepper, paprika, and thyme. Stir to combine.
  4. Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours.
  5. Thicken and Finish: About 30 minutes before serving, mix heavy cream with flour and stir into soup. Taste and adjust seasoning.
  6. Serve: Ladle into bowls, top with extra cheese if desired, and enjoy!
