Description

A delicious and nutritious vegan soup made with carrots and potatoes, perfect for chilly days.


Ingredients

  • 2 cups carrots, chopped
  • 2 cups potatoes, peeled and chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk (or any plant-based milk)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until onions are translucent.
  2. Add carrots and potatoes to the pot, stirring for a few minutes.
  3. Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the vegetables are tender.
  4. Remove from heat and blend the soup with an immersion blender until smooth.
  5. Stir in coconut milk and season with salt and pepper.
  6. Serve hot, garnished with fresh herbs if desired.

Notes

Use fresh vegetables for better flavor. Adjust the consistency of the soup by adding more or less vegetable broth or coconut milk depending on your preference.
