- 2 cups broccoli florets
- 2 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cups vegetable broth
- 1 cup milk or cream
- 2 cups shredded cheese (cheddar or your choice)
- Salt and pepper to taste
- 2 tablespoons olive oil or butter
Instructions
- In a large pot, heat olive oil or butter over medium heat. Add the chopped onion and sauté until it becomes translucent.
- Add the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and let simmer until potatoes are tender, about 15 minutes.
- Stir in the broccoli and cook for an additional 5-7 minutes until tender.
- Use an immersion blender to puree the soup until smooth, or leave some chunks for texture if preferred.
- Stir in the milk or cream and cheese, mixing until melted and well combined.
- Season with salt and pepper to taste. Serve warm.
Notes
For a richer flavor, use chicken broth instead of vegetable broth. Add a pinch of red pepper flakes for spice. You can use frozen broccoli and mix different cheeses for variety.
