  • For the Creamy Spicy Sauce:
    • 1/2 cup sour cream or Mexican crema
    • 12 chipotle peppers in adobo sauce
    • 1 tablespoon adobo sauce (from the chipotle can)
    • 1 tablespoon fresh lime juice
    • 1/2 teaspoon garlic powder
    • Pinch of salt
  • For the Beef Filling:
    • 1 lb ground beef (or turkey, chicken, or vegetarian substitute)
    • 1 small onion, diced
    • 2 cloves garlic, minced
    • 1 teaspoon ground cumin
    • 1 teaspoon chili powder
    • 1/2 teaspoon smoked paprika
    • 1 teaspoon dried oregano
    • Salt and pepper, to taste
    • 1 cup cooked rice
    • 1 cup black beans, drained and rinsed
    • 1 cup shredded cheese (cheddar, Monterey Jack, or a mix)
  • For Assembling:
    • 68 flour tortillas
    • Additional shredded cheese for topping (optional)
    • Fresh cilantro, diced tomatoes, or avocado (for garnish, optional)

Instructions

  • Make the Creamy Spicy Sauce (5 minutes):
    In a blender or food processor, combine sour cream, chipotle peppers, adobo sauce, lime juice, garlic powder, and a pinch of salt. Blend until smooth and creamy. Refrigerate until ready to use.
  • Cook the Beef Filling (15 minutes):
    In a large skillet, heat a drizzle of oil over medium heat. Add the diced onion and cook for 2-3 minutes until softened. Add minced garlic and cook for an additional 30 seconds. Add ground beef and cook, breaking it apart, until browned. Stir in cumin, chili powder, paprika, oregano, salt, and pepper. Mix in rice and black beans, simmer for 5 minutes. Remove from heat.
  • Assemble the Burritos (10 minutes):
    Warm tortillas in a dry skillet or microwave for 10-15 seconds. Place a tortilla flat, spoon the beef mixture in the center, top with cheese, and add a spoonful of the creamy spicy sauce. Fold in the sides and roll tightly. Repeat with remaining tortillas.
  • Bake or Grill the Burritos (10-15 minutes):
    For baking: Preheat oven to 375°F (190°C). Arrange burritos seam-side down in a greased baking dish. Pour remaining creamy spicy sauce over the top and sprinkle with cheese. Bake for 15-20 minutes, until golden and bubbly.
    For grilling: Heat a skillet with a little oil or butter over medium heat. Grill burritos for 2-3 minutes on each side until crispy and golden.

 

  • Serve (5 minutes):
    Serve the burritos with your favorite toppings like chopped cilantro, diced avocado, or salsa. Enjoy!
