For the Steak Bites:

  • 1 lb steak (ribeye, sirloin, or filet mignon), cut into bite-sized cubes
  • Salt and pepper, to taste
  • 2 tbsp olive oil (or butter) for cooking

For the Garlic Butter Sauce:

  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 12 tsp fresh thyme or rosemary (optional)

For the Parmesan Cream Sauce:

  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • Salt and pepper, to taste
  • 12 tbsp unsalted butter (optional, for extra creaminess)

Instructions

  • Prepare the Steak Bites:
    • Cut your steak into 1 to 1.5-inch cubes and season generously with salt and pepper.
    • Heat 2 tbsp of olive oil or butter in a large skillet over medium-high heat.
  • Cook the Steak Bites:
    • Add the steak cubes to the hot skillet, cooking in batches if necessary to avoid overcrowding.
    • Sear for 5-7 minutes, turning occasionally, until the steak is browned on the outside and cooked to your desired level of doneness.
    • Remove the steak bites from the skillet and set aside.
  • Make the Garlic Butter Sauce:
    • In the same skillet, melt 4 tbsp of butter over medium heat.
    • Add the minced garlic and cook for about 30 seconds until fragrant. Add the thyme or rosemary if using.
    • Stir to combine and cook for an additional minute.
  • Make the Parmesan Cream Sauce:
    • In a separate saucepan, heat 1 cup of heavy cream over medium heat until it begins to simmer.
    • Gradually whisk in ½ cup of freshly grated Parmesan cheese, stirring until smooth and thickened.
    • Add salt and pepper to taste. For extra creaminess, stir in 1-2 tbsp of butter.
  • Combine the Steak Bites and Cream Sauce:
    • Return the steak bites to the skillet with the garlic butter.
    • Pour the Parmesan cream sauce over the steak, stirring gently to coat the steak bites with the creamy sauce.
    • Allow it to simmer for a few minutes so the sauce thickens and everything combines beautifully.
  • Serve:
    • Serve the garlic butter steak bites with your favorite side dishes like mashed potatoes, roasted vegetables, or a simple salad.
    • Garnish with extra grated Parmesan and fresh herbs, if desired.

Notes

  • For a spicy kick, add red pepper flakes to the garlic butter sauce.
  • You can substitute Parmesan with Romano or Gruyère cheese for a different flavor.
