- 2 large eggs
- 1 tablespoon all-purpose flour
- Salt and black pepper to taste
- Vegetable oil for frying
Instructions
- Peel and grate the potatoes. Squeeze out as much moisture as possible using a clean towel.
- In a large mixing bowl, combine grated potatoes, corn, cheddar cheese, onion, eggs, flour, salt, and pepper. Mix until well combined.
- Heat a layer of vegetable oil in a skillet over medium heat.
- Form 2-tablespoon scoops of the mixture into patties and flatten slightly.
- Fry the fritters in batches for 2–3 minutes per side, or until golden and crispy.
- Transfer to a paper towel-lined plate to drain. Serve warm with your favorite dipping sauce.
Notes
Try mixing in chopped jalapeños or herbs for extra flavor. For a lighter option, bake the fritters at 400°F (200°C) for 20–25 minutes, flipping halfway through.
