Description

Crispy cheddar corn potato fritters are golden-brown treats made with grated potatoes, corn, and cheddar cheese, fried to perfection. They’re a savory, crunchy snack or side dish that’s easy to make and delicious to enjoy.


Ingredients

  • 3 medium potatoes, peeled and grated (about 450g / 1 lb)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 100g (1 cup) shredded cheddar cheese
  • 1 small onion, finely chopped
  • 2 large eggs
  • 1 tablespoon all-purpose flour
  • Salt and black pepper to taste
  • Vegetable oil for frying

Instructions

  1. Peel and grate the potatoes. Squeeze out as much moisture as possible using a clean towel.
  2. In a large mixing bowl, combine grated potatoes, corn, cheddar cheese, onion, eggs, flour, salt, and pepper. Mix until well combined.
  3. Heat a layer of vegetable oil in a skillet over medium heat.
  4. Form 2-tablespoon scoops of the mixture into patties and flatten slightly.
  5. Fry the fritters in batches for 2–3 minutes per side, or until golden and crispy.
  6. Transfer to a paper towel-lined plate to drain. Serve warm with your favorite dipping sauce.

Notes

Try mixing in chopped jalapeños or herbs for extra flavor. For a lighter option, bake the fritters at 400°F (200°C) for 20–25 minutes, flipping halfway through.
