  • For the Dough:
    • 1 cup sourdough discard
    • 1/2 cup milk (dairy or dairy-free)
    • 1/4 cup sugar
    • 2 1/4 tsp active dry yeast
    • 1/4 cup melted butter
    • 3 1/2 cups all-purpose flour (or gluten-free flour blend)
    • 1/2 tsp salt
  • For the Cinnamon Filling:
    • 1/4 cup melted butter
    • 1/2 cup sugar
    • 2 tbsp ground cinnamon

 

  • For the Glaze:
    • 1 cup powdered sugar
    • 2 tbsp milk (dairy or dairy-free)
    • 1 tsp vanilla extract (or maple extract for a twist)

Instructions

  • Prepare the Dough:
    • In a large bowl, combine sourdough discard, milk, sugar, and yeast. Stir to combine.
    • Add melted butter, flour, and salt. Mix until a dough forms.
    • Knead the dough for about 8-10 minutes until smooth and elastic.
  • Let the Dough Rise:
    • Transfer the dough to a lightly oiled bowl, cover with a towel, and let it rise for 1-2 hours, or until it doubles in size.
  • Roll Out the Dough:
    • Punch down the dough and roll it out on a floured surface into a 12×8-inch rectangle.
  • Prepare the Filling:
    • Brush the rolled dough with melted butter.
    • Sprinkle the sugar and cinnamon mixture evenly over the butter.
  • Shape the Bites:
    • Roll the dough tightly into a log and cut into 1-inch pieces.
    • Arrange the pieces in a greased baking dish, leaving a little space between them.
  • Second Rise:
    • Cover the bites with a towel and let them rise for another 30 minutes.
  • Bake:
    • Preheat oven to 375°F (190°C).
    • Bake the cinnamon roll bites for 20-25 minutes, or until golden brown.
  • Make the Glaze:
    • In a small bowl, whisk together powdered sugar, milk, and vanilla extract to form a smooth glaze.

    • Drizzle the glaze over the warm cinnamon roll bites and enjoy!

  • Store in an airtight container for up to 3 days at room temperature.
