- For the Cinnamon Filling:
- 1/4 cup melted butter
- 1/2 cup sugar
- 2 tbsp ground cinnamon
- For the Glaze:
- 1 cup powdered sugar
- 2 tbsp milk (dairy or dairy-free)
- 1 tsp vanilla extract (or maple extract for a twist)
Instructions
- Prepare the Dough:
- In a large bowl, combine sourdough discard, milk, sugar, and yeast. Stir to combine.
- Add melted butter, flour, and salt. Mix until a dough forms.
- Knead the dough for about 8-10 minutes until smooth and elastic.
- Let the Dough Rise:
- Transfer the dough to a lightly oiled bowl, cover with a towel, and let it rise for 1-2 hours, or until it doubles in size.
- Roll Out the Dough:
- Punch down the dough and roll it out on a floured surface into a 12×8-inch rectangle.
- Prepare the Filling:
- Brush the rolled dough with melted butter.
- Sprinkle the sugar and cinnamon mixture evenly over the butter.
- Shape the Bites:
- Roll the dough tightly into a log and cut into 1-inch pieces.
- Arrange the pieces in a greased baking dish, leaving a little space between them.
- Second Rise:
- Cover the bites with a towel and let them rise for another 30 minutes.
- Bake:
- Preheat oven to 375°F (190°C).
