Ingredients
- 1¼ cups cooked bacon, chopped (divided)
- 1 (32-ounce) bag frozen diced potatoes
- 4 cups chicken broth
- 1 (10.5-ounce) can cream of chicken soup
- 8 ounces cream cheese, softened and cubed
- 1 (1-ounce) package dry ranch dressing mix
- ½ teaspoon black pepper
- ½ teaspoon onion powder
- 2 cups shredded sharp cheddar cheese (plus extra for serving)
- 1 cup half and half
- Green onions, chopped (for garnish)
Instructions
Combine ingredients in the slow cooker:
Add the frozen diced potatoes, chicken broth, cream of chicken soup, cubed cream cheese, ranch dressing mix, black pepper, onion powder, and 1 cup of the chopped bacon to a 6-quart slow cooker. Stir to combine.
Cook the soup:
Cover and cook on LOW for 5-6 hours or HIGH for 2-3 hours, until the potatoes are tender and the flavors have melded together.
Finish the soup:
About 15 minutes before serving, stir the soup well to fully incorporate the cream cheese into the mixture. Then, pour in the half and half and 2 cups of shredded sharp cheddar cheese. Cover and cook on low until the cheese is melted and the soup is creamy.
Garnish and serve:
Ladle the soup into bowls and garnish with the remaining chopped bacon, extra shredded cheddar cheese, and chopped green onions.
